Over recent decades, our eating habits have undergone significant changes. Industrially processed, nutrient-poor products increasingly dominate both store shelves and people's daily diets – with considerable consequences for our physical well-being.
Mette Mølbak, food editor at Politiken, presents at the day's theme programme, exploring what research shows about these trends. As co-author of "The Professor's Path to Health from Within" with professor Oluf Borbye Pedersen, she shares insights into how our gut bacteria affect our health – and how conscious dietary choices can help promote a healthy microbiome.
The event is part of Nørrebro Library's major food-themed day and is included in Copenhagen Libraries' "Science Matters" festival, where science communication for adults is presented in varied formats across the city throughout October and November.
