Dive into the art of natural winemaking at this practical workshop with Henno Matzen, an experienced biodynamic farmer, chef and natural winemaker. You will learn about fermentation, seasonal plants and the entire process behind wild wine production, from harvest to glass.
Henno shares his philosophy of approaching nature's offerings with curiosity – from dandelion and rhubarb to bird cherry blossom – and introduces step-by-step fermentation, plant identification, wild yeast and simple equipment. He has worked globally as an organic farmer, learned from the legendary forager Roland Rittman and been connected to kitchens such as Dragsholm Slot, Stedsans in the Woods and Knystaforsen. Today he works with his partner Henriette on Fejø at Storemosegaard.
As a finale, you will taste 3–4 of Henno's own natural wines and share reflections on the day's learnings. All participants receive notes on the method to take home.
No prerequisites required – just bring curiosity and a love for natural wine. The workshop takes place outdoors, so dress warmly, and the teaching is in Danish.
