Det Grønne Laboratorium at Hotel- og Restaurantskolen presents the second year of Upcycling Symposium – a comprehensive gastronomic event focused on circular food culture. The symposium brings together elite chefs from around the world, all committed to sustainable gastronomy and full utilization of raw ingredients.
The day features lectures and practical workshops where you'll encounter innovative approaches to managing food streams, concrete techniques for minimizing waste, and new ways of thinking about ingredients and food preparation. You'll gain insight into how top professionals work with side streams, by-products, and circular thinking to create both sustainability and exceptional flavor.
The event is closely linked to the nationwide gastronomic celebration in 2026 in connection with MICHELIN Guide Ceremony Nordic Countries and is part of the ambitious program "A Taste of the Stars," which celebrates the breadth and quality of Danish gastronomy. Admission: 49 DKK.
